Roasting transforms carrots in a way that boiling or steaming never quite does. Their natural starches break down as they cook, releasing sweeter flavours while the edges darken and become lightly crisp.
This recipe builds on that natural sweetness with a bright dressing of lime, garlic, fish sauce and pepper flakes. The key detail is timing: the sauce is added while the carrots are still piping hot, allowing the warmth to release the aromas of the garlic and lime zest without actually cooking them.

What You’ll Need

Makes 2 servings.
8 oz / 230 g baby carrots
2 Tbsp olive oil, divided
Fine sea salt
2 garlic cloves, peeled and minced
2 Tbsp fresh lime juice
Zest of 1 lime
1 tsp fish sauce
1 tsp red pepper flakes, such as Aleppo, Maras or Urfa
1/2 tsp ground black pepper

1. Heat The Oven

Preheat the oven to 425°F / 220°C.
A hot oven is important here because the goal is not simply to soften the carrots. High heat encourages browning at the edges and produces the lightly charred spots that give the finished dish more depth.

2. Prepare The Carrots

Slice the carrots lengthwise. Toss them with 1 tablespoon of the extra-virgin olive oil and season lightly with fine sea salt.
Arrange the carrots in a single layer in a medium roasting pan or on a baking sheet. Avoid piling them on top of one another, as direct contact with the hot surface helps them colour rather than steam.
Roast for 25 to 30 minutes. The tips should become crisp, while the carrots themselves turn golden brown with a few darker, charred areas.
Check the centre with a fork. It should slide through easily, showing that the carrots are tender inside even though the edges have developed texture.

3. Make The Garlic-Lime Dressing

While the carrots are roasting, prepare the dressing.
In a small bowl, combine the minced garlic, fresh lime juice, lime zest, fish sauce, red pepper flakes and ground black pepper.
Taste the mixture and add fine sea salt if needed.
The dressing works because it combines several contrasting flavours at once. Lime brings acidity, garlic adds sharpness, red pepper gives gentle heat and fish sauce contributes savoury depth. If fish sauce is not suitable, a vegan alternative can be used instead.

4. Dress The Carrots While Hot

As soon as the carrots come out of the oven, pour the prepared dressing over them.
Drizzle with the remaining 1 tablespoon of olive oil and toss or turn the carrots so every piece is evenly coated.
Adding the dressing immediately is important. The heat from the roasted carrots helps release the aromatic compounds in the raw garlic and lime zest, intensifying their fragrance without dulling their fresh flavour.

5. Serve Warm

Serve the carrots hot or warm as a side dish.
The finished texture should combine soft, sweet centres with crisp, browned edges, while the dressing adds enough acidity and heat to prevent the natural sweetness from becoming heavy.
The result is a deceptively simple vegetable dish: caramelised carrots, sharp citrus, fresh garlic and savoury seasoning all working together in a recipe that needs only a handful of ingredients but delivers far more flavour than its short preparation suggests.
